Vinificatie
Handmatige oogst in kistjes met zorgvuldige selectie. Korte koude maceratie, zachte persing en circa 3 maanden rijping op de lijst bij gecontroleerde temperatuur. De basiswijn wordt gespumantiseerd met de Charmat-lungo-methode in autoclaaf. Catarratto en Grillo, 12% vol.
